1/4 cup slivered almonds2 tablespoons chopped sun-dried tomatoes3 cups spinach leaves2 teaspoons minced garlic1 (12.3-ounce) package silken soft tofu, drained1 cup soybean oil1/4 cup balsamic vinegar1/4 cup grated romano cheese1/4 cup soy sour cream1 tablespoon sugar1 teaspoon salt1/2 teaspoon pepper
1) In blender or food processor, finely chop almonds and tomato pieces.
2) Add spinach and garlic; mix until smooth
3) Add remaining ingredients; mix until blended and smooth.
Serve over salad greens or on pasta
