8 ounces ( approximately 2 cups) defrosted shrimp, tails removed 3 tablespoons butter 2 tablespoons flour 3/4 cup half and half (milk may be used) 2-3 tablespoons green onions 1 tablespoon butter 8 eggs, beaten 1 teaspoon salt 1/4 teaspoon pepper Hot sauce for seasoning 1/2 cup shredded cheese 4 whole English muffins, toasted
1) In a large skillet, melt 2 tablespoons of butter and add flour to make a roux.
2) Slowly add the half and half and cook until mixture begins to thicken. Then Set aside.
3) In another skillet, sauté the onions and butter.
4) Add the eggs and seasonings and cook the eggs until they begin to set.
5)Gradually add the shrimp sauce mixture and cook until thick and creamy.
Serve over toasted English muffins and top with shredded cheese.
