1 1/2 lbs fresh ground turkey3/4 cup fresh or frozen chopped onions1/3 cup seasoned bread crumbs1/4 cup low-fat milk1 egg1/4 cup barbeque sauce1 packet (1.25 oz.) taco seasoning mix1 package refrigerated mashed potatoes1/2 cup crumbled bacon1 /2 cup canned French-fried onions1 cup shredded Mexican 4-cheese blend
1) Preheat oven to 350 degrees. In a large bowl, combine ground turkey, chopped onions, bread crumbs, milk, egg, taco seasoning and barbeque sauce.
2) Mix thoroughly; gently press into bottom of a 9-inch square baking dish. Bake for 15-20 minutes. Pour off any drippings.
3) In another bowl, mix together mashed potatoes, bacon crumbles and fried onions. Spread over meatloaf to the edges of the pan; sprinkle with cheese.
4) Return to the oven and bake for an additional 15 minutes. Slice and serve.
