Preheat oven to 325 degrees. Beat eggs in a large mixing bowl. Add the oil and pumpkin and beat until smooth. In a separate bowl, combine the remaining dry ingredients and gradually add to the pumpkin mixture.
Grease 5 mini-loaf pans or 2 regular 8x4-inch loaf pans; add batter. Bake for 45-50 minutes for the mini loaves and 65-70 minutes for the regular loaf pans.
