CHOCOLATE PECAN PIE
3 large eggs
3/4 cup granulated sugar
3/4 cup light or dark corn syrup
1/4 cup butter, melted
1 teaspoon vanilla
3/4 cup Ghirardelli dark chocolate chips
2/3 cup chopped pecans, toasted
1 unbaked deep-dish pie shell
Pecan halves, if desired
Whipping cream for topping
Preheat the oven to 350 degrees. In a mixing bowl, beat eggs until well blended. Add sugar and mix well. Add corn syrup, melted butter and vanilla and beat together.
Stir in the chocolate chips and chopped pecans. Place the pecan halves around the perimeter of the pie crust, if desired. Cover the crust to protect over-browning.
Bake for approximately 45 minutes, but don't over bake; the filling will be moist in the center. Allow to sit and cool for at least one hour before serving with whipped cream. Makes 8 servings.
