Preparing for Fat Tuesday at Pat's

Pat's Donuts and Kreme on Elida road was one busy place on the eve of Fat Tuesday.
Pat's owner Ed Ezzelle says it's all because of a sweet polish delicacy known as a Paczki.
"We're planning to make over 800 dozen Paczki's...that's 12-16 hour shifts for our employees."
 The guys in the back work like a finely tuned machine trying to crank out enough Paczki's to meet demand which when they started wasn't all that great.
"It's been a phenomenon. Six years ago when we started to Pazki's here at Pat's Donuts, we couldn't sell one, and then by the second and third year it started picking up. By the third and fourth years it was just unbelievable where we have a line out the door and we're just working hard and sweating hard all day just keeping up."
Making more than 800 dozen Paczki's takes a lot of dough.
"We're going to probably run a good 120 batches of dough. That's a good 500 pounds of flour that we'll use."
 And there's a variety of flavors to choose from. 
"We've got nine different flavors, anywhere from our traditional buttercreme flavors, custards and our fruit fillings." 
  By the way Ezelle says the most popular flavors are the vanilla and chocolate buttercream.
