Preheat oven to 350°.

  1. Mix together muffin ingredients  
    1. 4 oz. unsalted butter
    2. 8 oz. Granulated sugar
    3. 2 eggs
    4. 8 oz. sour cream
    5. 7 oz. soft red winter wheat
    6. ¼ tsp salt
    7. 1 tsp baking powder
    8. 1 tsp baking soda
    9. 1 tsp vanilla extract
    10. ½ cup cranberries
  2. Mix together granola ingredients 
    1. 1 ½ cup of quick oats
    2. 1/3 cup brown sugar
    3. 1/3 cup syrup
    4. ¼ tsp vanilla extract
    5. ½ cup coconut
    6. ¼ cup vegetable oil
  3. Scoop batter and top with granola in mini loaf tins
  4. Bake for 7 minutes, rotate loafs and bake another 7 minutes
