As part of St. Rita's Breast Cancer Summit, the public was introduced to some healthy meal options by The James Mobile Education Kitchen.

The James Cancer Hospital education kitchen travels the state teaching people about plant-based diets to reduce the risk of some cancers. Today first responders were introduced to some menu items that also promote maintaining a healthy weight and making healthy choices. The food was prepared in simple and quick 15 to 20 minute demonstrations and participants got a little taste test afterwards. One of the instructors said research has pointed in the direction of eating less meat.
