It's the last stage of judging for the Allen County Junior Fair competitors with the annual Kewpee Carcass Show.

ALLEN COUNTY, OH (WLIO) - It's the last stage of judging for the Allen County Junior Fair competitors with the annual Kewpee Carcass Show.

Members of the Ohio State University meat judging team in Columbus made the trip to Keystone Meats to judge the top-placing livestock at the Allen County Fair.

Members of the Ohio State University meat judging team in Columbus made the trip to Keystone Meats to judge the top-placing livestock at the Allen County Fair. Everything from steers, hogs, goats, and sheep was evaluated for the best quality and amount of sellable meat found in the carcass. Our Casey Mulcahy got a behind-the-scenes look at how the judges rank the carcasses and what factors into their scoring of each animal.

The Allen County OSU Extension Office will post results from the carcass show by the end of the week on their Facebook page at https://www.facebook.com/allencountyextension/.

"We have to remember that we're dealing with food animals. So when the youth exhibitors are showing these animals in the ring, especially for a market class, we're looking at how much of that product is sellable. So it's not fair to say that all 1,200-pound steers are going to result in the same percentages of fat and meat. So where the carcass show comes into play, where we come in is more along the lines of measuring certain factors to try to fine-tune that percent of sellable product outcome," explained Lyda Garcia, the Ohio State University association professor and extension meat specialist.
